Pumpkin Potato Soup
Friday, March 31st, 2006Potatoes and pumpkins are healthy. Why not make a soup of both? Here’s the recipe.
Ingredients:
- Pumpkin (one half)
- Potatoes (3-4)
- Soup cubes
- Caraway (Kümmel)
- Nutmeg (Muskatnuss)
- Milk
- Sour cream
- Ginger
- Salt
Slice the pumpkin and the potatoes into small cubes and put them into a pot containing hot water. Add salt, soup cubes, grained caraway, ginger and one nutmeg. Cook and mash the whole thing well but get rid of the nutmeg before you damage your equipment. Finally add a shot of milk and/or sour cream and stir. Before you serve the soup, you may add a shot of pumpkin seed oil as shown in the picture. Gives some nice effect.
